Sheet-Pan Supper: Sweet & Savory Chicken + Veggies

Busy weeknights call for meals that are simple, wholesome, and delicious. This one-pan wonder uses Azeka’s Maui Original Sauce to bring bold Hawaiian flavor to juicy chicken and crisp roasted veggies. Just toss everything together, roast, and dinner is ready! Minimal prep and minimal cleanup!


Ingredients (Serves 4)

  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 medium sweet potato, peeled and diced into small cubes
  • ½ red onion, sliced (optional)
  • ½ cup Azeka’s Maui Original Sauce, plus extra for serving
  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • Cooked rice or quinoa, for serving
  • Optional garnish: sliced green onions or sesame seeds

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease it with oil.
  2. Prep the chicken & veggies: In a large mixing bowl, combine chicken pieces, broccoli, bell peppers, sweet potato, and onion (if using).
  3. Season & coat: Drizzle with olive oil, add salt and pepper, then pour in ½ cup Azeka’s Maui Original Sauce. Toss well until everything is evenly coated.
  4. Arrange on a sheet pan: Spread chicken and vegetables in a single layer for even roasting.
  5. Roast: Bake for 20–25 minutes, flipping halfway through, until chicken is fully cooked (internal temp 165°F) and veggies are tender with slightly crisp edges.
  6. Serve: Spoon over warm rice or fluffy quinoa, and drizzle with extra Maui Original Sauce for added flavor. Garnish with green onions or sesame seeds if desired.

Pro Tip 

Double the recipe and portion leftovers into containers for easy grab-and-go lunch bowls the next day. The flavors taste even better after a night in the fridge!
