Ingredients
For the peppers:
- 4 orange bell peppers (choose firm, evenly shaped ones)
- Olive oil, for brushing
For the filling:
- 1 lb ground or shredded chicken
- 1 small onion, diced
- 1 cup cooked rice (white, brown, or jasmine)
- ½ cup corn kernels (fresh or frozen)
- ½ cup black beans, rinsed and drained
- ½ cup shredded cheese (cheddar or Monterey Jack)
- ⅓ cup Azeka’s Maui Original Sauce
- Salt & pepper to taste
Instructions
1. Prepare the peppers
- Preheat the oven to 375°F (190°C).
- Slice off the tops of the orange bell peppers and remove seeds and membranes.
- Use a small paring knife to carve jack-o-lantern faces into each pepper.
- Brush the outsides lightly with olive oil and place them upright in a baking dish.
2. Make the filling
- In a skillet over medium heat, sauté onion in a drizzle of oil until translucent.
- Add ground meat and cook until browned.
- Stir in rice, corn, black beans, Azeka’s Maui Original Sauce, and a pinch of salt & pepper.
- Mix well, then stir in shredded cheese. Remove from heat.
3. Stuff and bake
- Spoon the filling evenly into each carved pepper.
- Cover loosely with foil and bake for 20 minutes.
- Remove foil and bake another 5-10 minutes until the peppers are tender and the glaze is bubbling.
4. Serve
Place peppers on a platter and spoon any extra sauce from the pan over the tops for a glossy finish. Serve warm with extra Azeka’s Maui Original Sauce on the side for dipping.
Tips & Variations
Make it vegetarian: Replace the meat with vegan meat alternatives, tofu, or veggies and add extra corn& beans.
Make it spicier: Swap in Azeka’s Spicy Maui Sauce for heat.
