- 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- ½ cup cornstarch
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper

- 1½ cups jasmine rice, cooked according to package instructions

Instructions
- Prepare the Rice
Cook the jasmine rice according to package instructions. Keep warm and set aside. - Coat the Chicken
In a large bowl, toss the chicken pieces with cornstarch, garlic powder, salt, and black pepper until evenly coated. - Fry the Chicken
Heat about 1 inch of neutral oil in a deep skillet or pan over medium-high heat.
Fry the chicken in batches for 3–4 minutes per side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain. - Toss with Sweet Chili Sauce
In a clean pan over low heat, add the fried chicken and pour in Azeka’s Hawaiian Sweet Chili Sauce. Gently toss until the chicken is evenly coated and glossy. Remove from heat. - Assemble the Bowls
Divide the jasmine rice between bowls. Top with sweet chili chicken, cucumber, and edamame. - Garnish and Serve
