

Crock-Pot Hawaiian Chicken Meatballs with Pineapple
If you are hosting a luau or just trying to feed the whole family, including the in-laws, try this tasty recipe. The combination of pineapple and Azeka’s Maui Original Sauce makes for one heck of a dinner!
Ingredients
- 1 lb – Ground Chicken
- 1/4 Cup – Bread Crumbs
- 1 – Large Egg
- 1 Tablespoon – Fresh Parsley
- 2 Tablespoon – Milk
- 1/4 Teaspoon – Salt
- 3/4 Teaspoon – Pepper
- 1 Tablespoon – Canola oil
- 2 Tablespoons – Minced Scallions
- 1 Can – Chunked Pineapple in Juice
- 1 Jar – Azeka’s Maui Original Sauce
Directions
In a large mixing bowl, combine Ground Chicken, Bread Crumbs, Large Egg, Fresh Parsley, Milk, Salt, and Pepper. Mix ingredients until combined and shape into approximately 1-inch round balls.
In a large skillet, heat oil over medium heat. Add Chicken meatballs one at a time and brown the outside of each ball. Each ball should take about 5 minutes with constant turning in the skillet. Finish cooking each Chicken meatball and set aside.
Lightly coat the crock-pot with cooking spray and add the browned Chicken meatballs and Chunked Pineapple. Once everything is in the crock-pot, cover the contents with the Azeka’s Maui Original Sauce. Cook on low for 5-6 hours, stirring the pot occasionally, until Chicken meatballs are fully cooked. Add Minced Scallions to liking and enjoy!
Tips: For an extra kick, add 1-2 Tablespoons of Azeka’s Lava Sriracha sauce for some sweet heat!
