Ingredients
For the Chicken:
- 2 lbs boneless, skinless chicken thighs
- 1 cup Azeka’s Maui Original Sauce (plus extra for basting)
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tbsp sesame oil
- 1 tbsp brown sugar (optional, for extra caramelization)
For the Pineapple Salsa:
- 2 cups fresh pineapple, diced
- ¼ cup red onion, finely chopped
- ¼ cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced (optional)
- Juice of 1 lime
- Salt to taste
Instructions
1. Marinate the Chicken
In a bowl, whisk together Azeka’s Maui Original Sauce, garlic, ginger, sesame oil, and brown sugar.
Add chicken thighs and toss to coat. Cover and refrigerate for at least 2 hours (overnight for best flavor).
2. Prepare the Pineapple Salsa
In a medium bowl, combine pineapple, red onion, cilantro, jalapeño (if using), and lime juice.
Season with salt to taste. Chill until ready to serve.
3. Grill the Chicken
Preheat grill to medium-high heat. Lightly oil the grates.
Remove chicken from marinade and grill for 5-7 minutes per side, basting with additional sauce as it cooks, until fully cooked and nicely caramelized.
4. Assemble & Serve
Transfer chicken to a serving platter and let rest for a few minutes.
Top generously with pineapple salsa and serve immediately.
