Grilled Portobello Mushrooms with Azeka’s Spicy Maui Original Sauce

Serves: 4
Time: 25 minutes


This vegetarian recipe is packed with bold flavor thanks to Azeka’s Spicy Maui Original Sauce. It’s easy to make, perfect for grilling season, and great served over jasmine rice or another simple base with a few simple toppings.

Ingredients

  • 4 large portobello mushroom caps
  • 1/2 cup Azeka’s Spicy Maui Original Sauce (plus more for drizzling)
  • 1 tablespoon olive oil
  • Recommended sides: 2 zucchinis, sliced lengthwise & 2 cups cooked jasmine rice
  • Recommended toppings: chopped green onions, sesame seeds, lime wedges


Instructions

  1. Prep the mushrooms:
    Wipe mushrooms clean with a damp paper towel. Remove stems.
    In a small bowl, mix Azeka’s Spicy Maui Original Sauce with olive oil. Brush all over the mushrooms.
  2. Grill the Mushrooms:
    Preheat the pan or grill to medium-high.
    Grill mushrooms for about 5–6 minutes per side, until tender and charred.
  3. Grill the Zuccini:
    Grill zucchini slices 3–4 minutes per side.
  4. Assemble the bowls:
    Place jasmine rice or your choice of base in bowls. Top with sliced mushrooms, and zucchini. Drizzle with extra Azeka’s Spicy Maui Original Sauce and add your favorite garnishes.

Serving Tips

For a heartier meal, add a fried egg or tofu on top.

Serve warm for the best flavor.
