Hawaiian BBQ Chicken Salad Bowl with Sweet Chili Vinaigrette

This Hawaiian BBQ Chicken Salad Bowl brings together smoky grilled chicken, fresh spring vegetables, and bright tropical flavors. Glazed with Azeka’s Maui Original Sauce and finished with a light Sweet Chili vinaigrette using Azeka’s Hawaiian Sweet Chili Sauce.  it’s a refreshing way to enjoy Hawaiian BBQ flavors in a lighter, produce-forward dish.

Ingredients

For the Chicken

  • 2 boneless, skinless chicken breasts
  • ½ cup Azeka’s Maui Original Sauce
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

For the Salad

  • 4 cups mixed salad greens
  • 2 cups shredded cabbage (green or purple)
  • 1 avocado, sliced
  • 1 cup mandarin orange segments (fresh or canned, drained)
  • 1 cup shelled edamame (cooked and cooled)
  • ½ cup shredded carrots
  • ½ cup crispy wonton strips
  • 2 tablespoons chopped green onions
  • Optional: sesame seeds for garnish

For the Sweet Chili Vinaigrette

  • 3 tablespoons Azeka’s Hawaiian Sweet Chili Sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • ½ teaspoon grated fresh ginger (optional)
  • Pinch of salt

Instructions

1. Prepare the Chicken

  1. Preheat a grill or grill pan to medium-high heat.
  2. Brush chicken breasts with olive oil and season lightly with salt and pepper.
  3. Grill the chicken for 5 – 6 minutes per side, or until fully cooked.
  4. During the last 2 minutes of cooking, brush both sides generously with Azeka’s Maui Original Sauce to create a caramelized glaze.
  5. Remove from heat and let rest for 5 minutes, then slice into strips.

2. Make the Sweet Chili Vinaigrette

  1. In a small bowl or jar, whisk together Sweet Chili Sauce, rice vinegar, sesame oil, olive oil, honey, and ginger.
  2. Season with a pinch of salt.
  3. Taste and adjust sweetness or acidity if needed.

3. Assemble the Salad Bowls

  1. Divide the mixed greens and shredded cabbage among four bowls.
  2. Top with sliced grilled chicken, mandarin oranges, avocado slices, edamame, and shredded carrots.
  3. Sprinkle crispy wonton strips and green onions on top.
  4. Drizzle lightly with the Sweet Chili vinaigrette.

Serving Tip

Finish with a sprinkle of sesame seeds and an extra drizzle of Azeka’s Maui Original Sauce over the chicken for even more Hawaiian BBQ flavor.
