Hawaiian Pineapple Chicken
Ingredients
- 1.5-2 lbs chicken (thighs or breasts, cubed or whole)
- 1 cup Azeka’s Maui Original Sauce
- 1 cup fresh pineapple chunks (or canned, drained)
- 1 bell pepper (red or yellow, sliced)
- 1/2 red onion (sliced)
- 2 cloves garlic (minced)
- 1 tbsp olive oil
- Optional: green onions + sesame seeds for garnish
- Cooked rice (for serving)
Instructions
1. Sear the chicken
Heat olive oil in a large pan over medium-high heat.
Season chicken lightly with salt + pepper, then sear until browned (about 4-5 min per side if whole, less if cubed).
2. Add flavor
Lower heat to medium. Add:
- garlic
- bell pepper
- onion
Cook for 2-3 minutes until slightly softened.
3. Sauce it up
Pour in Azeka’s Maui Original Sauce and stir to coat everything.
Add pineapple chunks.
Let simmer for 5-7 minutes until:
- chicken is fully cooked
- sauce thickens slightly
- everything gets glossy + caramelized
4. Serve
Serve over rice and top with:
- sliced green onions
- sesame seeds
