Hawaiian Pineapple Chicken

Hawaiian Pineapple Chicken
Ingredients

  • 1.5-2 lbs chicken (thighs or breasts, cubed or whole)
  • 1 cup Azeka’s Maui Original Sauce
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1 bell pepper (red or yellow, sliced)
  • 1/2 red onion (sliced)
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • Optional: green onions + sesame seeds for garnish
  • Cooked rice (for serving)

Instructions

1. Sear the chicken

Heat olive oil in a large pan over medium-high heat.
Season chicken lightly with salt + pepper, then sear until browned (about 4-5 min per side if whole, less if cubed).

2. Add flavor

Lower heat to medium. Add:

  • garlic
  • bell pepper
  • onion

Cook for 2-3 minutes until slightly softened.


3. Sauce it up

Pour in Azeka’s Maui Original Sauce and stir to coat everything.
Add pineapple chunks.

Let simmer for 5-7 minutes until:

  • chicken is fully cooked
  • sauce thickens slightly
  • everything gets glossy + caramelized

4. Serve

Serve over rice and top with:

  • sliced green onions
  • sesame seeds
