Ingredients
- 3 cups cooked chicken, shredded or diced
- 3 cups cooked white or brown rice
- 3 cups broccoli florets, lightly steamed
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1/2 cup chicken broth
- 2 cups shredded sharp cheddar cheese, divided
- 1/2 cup shredded Monterey Jack cheese
- 1/3 cup Azeka’s Da Red Lava Sriracha or Da Green Lava Sriracha
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- Sliced green onions, for garnish, optional
- Extra Lava Sriracha, for serving
Instructions
- Preheat the oven. Preheat your oven to 375°F. Lightly grease a 9×13-inch casserole dish.
- Make the cheese sauce. Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for about 1 minute. Slowly whisk in the milk and chicken broth until smooth. Continue cooking for 3–5 minutes, stirring frequently, until the sauce begins to thicken.
- Make it cheesy and spicy. Reduce the heat to low. Stir in 1 cup cheddar cheese, the Monterey Jack, garlic powder, onion powder, smoked paprika, salt, and black pepper. Once the cheese has melted, stir in the Azeka’s Lava Sriracha. Start with a little less if you prefer a milder casserole and add more to taste.
- Combine the casserole. In a large bowl, combine the cooked chicken, rice, and broccoli. Pour the Lava Sriracha cheese sauce over everything and gently stir until evenly coated.
- Assemble. Transfer the mixture to the prepared casserole dish and spread it into an even layer. Sprinkle the remaining 1 cup cheddar cheese over the top.
- Bake. Bake uncovered for 20–25 minutes, or until the casserole is hot and bubbling around the edges and the cheese is beautifully melted. For a more golden top, broil for 1–2 minutes at the end, watching carefully.
- Serve. Let the casserole rest for about 5 minutes before serving. Garnish with sliced green onions, if desired, and bring extra Lava Sriracha to the table for anyone who wants more heat.
Red or Green?
Choose Azeka’s Da Red Lava Sriracha for bold red-chili heat, or use Da Green Lava Sriracha to give the casserole a different spicy twist. Either one cuts through the rich, creamy cheese and adds an island-inspired kick.
Turn up the heat: Drizzle each serving with extra Lava Sriracha just before digging in.
Make it ahead: Assemble the casserole, cover, and refrigerate for up to 24 hours. When ready to serve, bake straight from the refrigerator, adding approximately 5–10 minutes to the cooking time.
