Maui Original Turkey Fried Rice

A 10-minute dinner that tastes better than takeout.
Perfect for using up leftover turkey and turning it into something crave-worthy.


Ingredients (Serves 2-3)

  • 2 cups leftover turkey, shredded or diced
  • 2 cups of cooked rice (white or jasmine works best)
  • 1-1½ cups mixed vegetables
    • Fresh (carrots, peas, green beans, green onions) or leftover roasted veggies
  • 1-2 tablespoons oil (neutral or sesame)
  • 2-3 tablespoons Azeka’s Maui Original Sauce, plus more to taste
  • 1 egg (optional, fried or scrambled)
  • Salt & pepper, to taste
  • Green onions or sesame seeds for garnish (optional)

Instructions

  1. Heat the pan
    Warm a large skillet or wok over medium-high heat. Add the oil and let it get hot and shimmering.
  2. Cook the veggies
    Toss in your mixed vegetables and sauté for 2-3 minutes until warmed through and slightly caramelized.
  3. Add the turkey
    Stir in the shredded or diced turkey and cook for 1-2 minutes to heat it through.
  4. Fold in the rice
    Add your rice to the pan. Stir everything together so the rice absorbs the flavors.
  5. Sauce it up
    Drizzle Azeka’s Maui Original Sauce over the rice mixture. Keep stirring for another 1-2 minutes until everything is glossy, lightly caramelized, and evenly coated.
    Add more sauce if you want it sweeter or saucier.
  6. Add the egg (optional)
    • For a fried-egg finish: Cook an egg sunny-side up in a separate pan and place it on top of each serving.
    • For scrambled: Push the rice to one side, scramble the egg in the empty space, then fold it into the fried rice.
  7. Serve
    Season with salt and pepper, garnish with green onions or sesame seeds, and enjoy immediately.
