Ingredients (Serves 2-3)
- 2 cups leftover turkey, shredded or diced
- 2 cups of cooked rice (white or jasmine works best)
- 1-1½ cups mixed vegetables

- 1 egg (optional, fried or scrambled)
- Salt & pepper, to taste
- Green onions or sesame seeds for garnish (optional)
Instructions
- Heat the pan
Warm a large skillet or wok over medium-high heat. Add the oil and let it get hot and shimmering. - Cook the veggies
Toss in your mixed vegetables and sauté for 2-3 minutes until warmed through and slightly caramelized. - Add the turkey
Stir in the shredded or diced turkey and cook for 1-2 minutes to heat it through. - Fold in the rice
Add your rice to the pan. Stir everything together so the rice absorbs the flavors. - Sauce it up
Drizzle Azeka’s Maui Original Sauce over the rice mixture. Keep stirring for another 1-2 minutes until everything is glossy, lightly caramelized, and evenly coated.
Add more sauce if you want it sweeter or saucier. - Add the egg (optional)
- For a fried-egg finish: Cook an egg sunny-side up in a separate pan and place it on top of each serving.
- For scrambled: Push the rice to one side, scramble the egg in the empty space, then fold it into the fried rice.
