Pineapple Soy Caramel Bread Pudding

A comforting classic with a tropical twist! Sweet Hawaiian bread, juicy pineapple, and a rich soy-caramel sauce come together to create a dessert that’s warm, nostalgic, and unmistakably island-inspired. Each bite captures that perfect balance of sweet, salty, and tropical – made even better with the umami depth of Azeka’s Soy Sauce or our NEW Azeka’s Gluten Free Tamari Soy Sauce!


Ingredients

For the Bread Pudding

  • 6 cups Hawaiian sweet bread, cubed (day-old preferred)
  • 1 ½ cups pineapple chunks, drained
  • 4 large eggs
  • 1 ½ cups whole milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • Pinch of salt

For the Pineapple Soy Caramel Sauce

  • ½ cup butter
  • 1 cup brown sugar, packed
  • ¼ cup pineapple juice (reserved from canned pineapple or fresh)
  • 1- 2 teaspoons of Azeka’s Soy Sauce or our NEW Azeka’s Gluten Free Tamari Soy Sauce!
  • Optional: extra pineapple juice or cream to thin

Instructions

1. Preheat & Prep

  • Preheat oven to 350°F (175°C).
  • Lightly grease an 8×8 or 9×13 baking dish, depending on how thick you want the pudding.

2. Make the Soy Caramel

  1. In a saucepan over medium heat, melt the butter.
  2. Stir in the brown sugar until dissolved and bubbling.
  3. Add pineapple juice and cook for 1–2 minutes.
  4. Add Azeka’s Soy Sauce, starting with 1 teaspoon and adding more to taste.
  5. Simmer until slightly thickened. Remove from heat.

This sauce should be glossy, pourable, and rich – not too thick.


3. Build the Bread Pudding

  1. In a large bowl, whisk together:
    • eggs, milk, cream, sugar, vanilla, cinnamon, and salt.
  2. Add the bread cubes and pineapple chunks, gently stirring to coat.
  3. Let sit for 5-10 minutes to allow the bread to soak.
  4. Pour half of the soy caramel into the bottom of your baking dish.
  5. Spoon the bread mixture on top, spreading evenly.
  6. Drizzle a little more caramel over the top.

4. Bake

  • Bake uncovered for 40-45 minutes, or until the top is golden and the center is set but slightly soft.
  • If it begins to brown too quickly, loosely tent with foil.

5. Serve with More Caramel

Warm the remaining caramel and drizzle generously over each slice before serving.
For extra indulgence, add:

  • Fresh pineapple
  • Vanilla ice cream
  • Whipped cream

Tips for the Perfect Texture

  • Day-old bread is best – it soaks up the custard beautifully.
  • For extra tropical flavor, replace half the milk with coconut milk.
  • Add toasted macadamia nuts for crunch.
  • Add a splash of more soy sauce for a deeper salted-caramel vibe.
