In this easy winter dinner, Azeka’s Sauce transforms simple ingredients into a comforting, sweet-savory meal with a glossy, caramelized finish. As the chicken roasts, the sauce thickens and clings to the meat, creating crispy edges and tender bites packed with flavor.

This is a reliable, no-fuss dinner that feels hearty enough for chilly nights while staying effortless. It’s the perfect meal to kick off the New Year after all of those holiday celebrations.


Ingredients

Serves 4

  • 2 pounds bone-in, skin-on chicken thighs
  • ¾ cup Azeka’s Sauce (Maui Original or Spicy Maui Original work especially well)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced (optional)
  • Freshly ground black pepper, to taste

For serving (optional):

  • Steamed white or jasmine rice
  • Roasted broccoli or green beans
  • Sesame seeds or sliced green onions for garnish

Instructions

  1. Preheat the oven
    Preheat oven to 400°F. Lightly grease or line a rimmed baking sheet or roasting pan with foil.
  2. Prepare the chicken
    Pat the chicken thighs dry with paper towels. This helps the skin crisp while roasting. Place the chicken skin-side up on the prepared pan.
  3. Season and glaze
    In a small bowl, mix Azeka’s Sauce with olive oil and garlic (if using). Brush the sauce generously over each chicken thigh, reserving a small amount for basting later. Season lightly with black pepper.
  4. Roast the chicken
    Roast uncovered for 35–40 minutes, basting once halfway through with the remaining sauce. The chicken is done when the internal temperature reaches 165°F and the glaze is thick, glossy, and caramelized.
  5. Broil for extra caramelization (optional)
    For crispier edges, broil for 2–3 minutes at the end, watching closely to prevent burning.
  6. Rest and serve
    Let the chicken rest for 5 minutes before serving to allow the juices to settle.

Serving Suggestions

Serve the glazed chicken thighs over steamed rice to soak up the extra sauce, with roasted broccoli or green beans on the side for a simple, balanced winter meal. Garnish with sesame seeds or green onions if desired.

Extra sauce can be warmed and drizzled over the chicken just before serving for added flavor.

Boneless thighs can be used; reduce cooking time to 25–30 minutes.

For a sheet-pan meal, add vegetables to the pan during the last 15–20 minutes of roasting.
